About this coffee

The so-called Meseta de Popayán is perfectly suited to growing coffee.

Situated at 1,700 MASL and sheltered by the Andes mountain range, it provides climatic consistency. Pair this with the region’s fertile volcanic soil and boom! We have high-end terroir prime for coffee cultivation. The coffees grown here are harvested, fully washed and then sent to a plant to go through the sugarcane decaffeination process - which is the only completely natural way to decaffeinate coffee.

We're absolutely buzzing to add this batch of Colombian decaf to our coffee collection. A beautiful balance of cinnamon sweetness and smooth dark chocolate, Popayán offers a floral rose finish and is a wonderful example of decaffeinated coffee that actually tastes like coffee!

Fully Washed Coffee Process:

The plant uses water from the volcanic slopes of the Meseta de Popayán, and natural ethyl acetate from fermented sugarcane - adding a raw sweetness to this washed coffee.

The beans are then submerged in the fermented sugarcane liquid until 97% of the caffeine is removed.

The end result is a beaut decaf coffee that tastes just as good as any of its caffeinated cousins!

Producer

Our import partners, Cofinet, have worked hard to build long term relationships with a group of approximately 65 farmers in the Popayán reserve in the department of Cauca. As a result of these partnerships, producers in the region have been able to come together and improve their coffee production Together, these farmers are growing Colombian single origin coffees that are truly worthy of recognition for their high quality and consistently great taste.

We practice omni roasting—a philosophy kind of like finding each coffee bean's one true love in roast form!

This means every bean gets its perfect roasting match to highlight its unique quirks and flavours. Naturally decaffeinated beans, after their caffeine-free makeover, can be a bit sensitive and prone to over-roasting, so we steer clear of going too dark to keep their delightful tastes intact.

Colombian Popayan for both Aeropress and espresso

I like cappuccinos and their milkiness needs a more bitter taste I also like my coffee black and that, for me, needs to be sweeter,more mellow.

The Colombian is delicious for espresso with my sage setup . I grind the beans at level 9 for 12 seconds.

For the aeropress I grind them coarser, at 14, also for 12 seconds. The aeropress is slightly sweeter than the espresso which is perfect twinned with oat milk for a cappuccino, and makes an 8oz cup so I have it black .

I'm delighted I don't have to buy two different coffees so I can buy a kg of beans and get through them before they go stale .
