About this coffee

El Indio comes from Planadas, tucked into the southern tip of Tolima where the Colombian Andes rise into high, cool mountains. Volcanic soil, fresh air and altitudes reaching 2,150 metres give this corner of Colombia everything it needs to grow exceptional coffee, and Tolima has earned its place in the Cup of Excellence year after year.

This is a natural-processed lot, which means the cherries are dried whole so the fruit sugars soak deep into the bean. Once dried, the coffee is decaffeinated using sugarcane method, a gentle process that lifts the natural sweetness while keeping the character fully intact.

In the cup, rich dark chocolate leads the way, wrapped around a tart rhubarb brightness and a burst of juicy pineapple on the finish. Sweet, fruity and full-bodied, it's a decaf with real swagger and nothing held back.

Producer

El Indio is grown by a network of around 175 coffee-farming families across Planadas, most working small plots passed down through generations. Since 2019 our partners in Tolima have worked alongside these growers, sharing hands-on technical training in natural processing, a skill that rewards patience and precision. The results speak for themselves. Most of the families we work with now process at least 80% of their harvest as natural, turning a tricky, high-risk method into a genuine local speciality. It's slow, careful work that keeps quality and pride firmly in the hands of the people who grow the coffee.

Perfectly Roasted

We practice omni roasting—a philosophy kind of like finding each coffee bean's one true love in roast form!

This means every bean gets its perfect roasting match to highlight its unique quirks and flavours. Naturally decaffeinated beans, after their caffeine-free makeover, can be a bit sensitive and prone to over-roasting, so we steer clear of going too dark to keep their delightful tastes intact.
